Olive & Well Two-Hearts Salad (Print Recipe) (E-mail Recipe)
Garden salads, eat your heart out! Artichoke hearts and Hearts of Palm combine in this elegant and complex salad. Hearts of Palm can be found in your grocer’s aisle next to artichoke hearts. Mildly flavored, they add a new dimension of texture to any salad, especially this one!
Serves 6
Ingredients:
2 Tbsp. fresh lemon juic 2 1/2 tsp. Dijon mustard 1 large garlic clove, minced 6 tbsp. Olive & Well Arbosana Extra Virgin Olive Oil 1 (14.5-ounce) can of hearts of palm, drained and sliced into rounds 1 (13.75-ounce) can of quartered artichoke hearts, drained 1 head butter lettuce 12 cherry tomatoes, halved
Whisk gently lemon juice, mustard and garlic in medium bowl. Add hearts of palm and artichoke hearts and toss. Let marinate at room temperature at least 20 minutes and up to 4 hours, tossing occasionally. Line plates with lettuce leaves. Using slotted spoon, divide hearts of palm and artichoke hearts among plates. Garnish with tomatoes. Spoon remaining dressing over and serve with crusty bread.
