Tomato Bruschetta

Bruschetta is always a hit at restaurants and gatherings. Use the best oil, bread and fresh tomatoes to bring it all together. 
Serves 4

Ingredients:
Olive & Well Hoji-Picudo Olive Oil
4 medium sized fresh tomatoes
Fresh Ciabatta bread, thickly sliced
1 small red onion, finely chopped
1/3 cup fresh basil, chopped
2 fresh garlic cloves
Sea salt and fresh cracked pepper


Preheat oven to 350 degrees. Toast bread for 10 minutes and rub one side with cut garlic clove. Drizzle Olive & Well Hoji-Picudo Olive Oil over each piece of toasted bread and set aside. Dice tomatoes and drain off excess juice. Add basil, onion, salt and pepper to tomatoes. Spoon tomato bruschetta mixture over toasted bread.

Variation:
Add diced avocado, mozzarella pieces and finely chopped black olives to tomato bruschetta mixture prior to spooning over toasted bread.
