Green Olive and Caper Tapenade (Print Recipe) (E-mail Recipe)
Tapenade is the Italian word for "spread" or "to put on top of." Serve this tapenade on bruschetta (toasted bread) or as a sandwich spread.
Makes About 2/3 Cup
Ingredients:
5 Tbsp. capers, drained 1/2 cup pimento-stuffed green olives (5-ounce jar) 2 flat anchovy fillets 4 garlic cloves 1/2 cup Olive & Well Mission Extra Virgin Olive Oil
In a food processor, combine capers, olives, anchovies and garlic. With motor running, add olive oil in a stream, and puree until mixture forms a coarse paste. NOTE: When covered and chilled, tapenade keeps for a week.
