Artichoke Pesto with Garlic Oil (Print Recipe) (E-mail Recipe)
You’ll want to make this over and over. It makes a rich sauce for pasta, shrimp, chicken and fish.
Ingredients:
2 large artichokes or 1 can of artichoke hearts (not marinated) 1 cup packed fresh basil 1-1/4 cup Olive & Well Garlic olive oil 1 tbsp Romano cheese 1 tbsp Parmesan cheese
Remove all leaves from artichokes and cut into quarters. Blend artichoke hearts, basil and garlic olive oil in food processor. Transfer to a bowl and season with sea salt and fresh ground pepper to taste. Toss with pasta.
Variation:
Add mushrooms and Italian meats for an antipasta dish.
