Pasta with Lemon and Garlic, Variation with Smoked Salmon (Print Recipe) (E-mail Recipe)
An easy weeknight dish and simple to put together. Smoked salmon is readily available at your local grocer in the seafood department. A fabulous smoked salmon fillet will have a velvet-smooth texture, a beautiful peach color, and a flavor that is intensely smoky and only subtly salty.
Serves 4
Ingredients:
1 pound Olive & Well Orrecchiette pasta 1/4 cup Olive & Well Koroneiki extra virgin olive oil 1 pound smoked salmon, broken into bite-sized pieces 1 leek chopped fine or 3 large green onions chopped fine 2 garlic cloves, minced 4 large fresh basil leaves, chopped 1 lemon, zested and juiced 2 Tbs capers Salt and pepper to taste 3/4 cup grated or shaved parmesan cheese
Cook the pasta for 10 – 12 minutes, or according to package in salted water. Drain. Heat 2 tablespoons of the oil over medium heat. Add leeks or green onions, and sauté for 2 minutes. Add garlic and salmon pieces sautéing until fish is warmed through. Add the lemon juice, lemon zest, and capers until heated through. Taste for seasonings and add sea salt and fresh cracked pepper if needed. Toss salmon mixture with the hot pasta. Drizzle with remaining 2 tablespoons of oil and top with parmesan cheese
