Pumpkin Bread (Print Recipe) (E-mail Recipe)
Pumpkin bread isn’t just for fall anymore. Freeze a loaf or two for mid-winter enjoyment or to give as holiday or hostess gifts.
Makes one loaf
Ingredients:
1 1/2 cups flour 1/2 tsp of salt 1 cup sugar 1 tsp baking soda 1 cup canned pumpkin 1/2 cup Olive & Well Spanish Picual extra virgin olive oil 2 eggs, lightly beaten 1/4 cup water 1/4 tsp nutmeg 1/4 tsp cinnamon 1/4 tsp allspice 1/2 cup chopped walnuts, optional
Preheat oven to 350 degrees. Sift together the flour, salt, sugar, and baking soda. Mix the pumpkin, oil, eggs, water, and spices together, then combine with the dry ingredients, and mix until just incorporated. Stir in the nuts. Pour into a greased 9” inch loaf pan. Bake 50-60 minutes or until a toothpick inserted comes out clean. Cool for 10 minutes, then turn out of the pan and let cool on a rack.
