Olive Oil Cranberry Bundt Cake (Print Recipe) (E-mail Recipe)
Bundt cakes were once a staple for potlucks and large gatherings, but have become ideal for entertaining in your own home. Enjoy this rich and moist cake with your holiday meal, and surprise your guests when you tell them they’re eating healthy olive oil!
Serves 10-12
Ingredients:
6 egg whites 2 cups white sugar 1 cup Olive & Well Arbosana olive oil 2 cups all-purpose flour 1 tsp baking soda 1 tsp salt 3/4 tsp ground cinnamon 3/4 tsp ground cloves 1 cup buttermilk 1 cup chopped cranberries
Preheat oven to 350 degrees. Spray a 9 inch Bundt pan with cooking spray, and dust with flour. In a bowl, beat the egg whites until stiff. Beat in the sugar until fluffy. Mix in the olive oil. In a separate bowl, mix the flour, baking soda, salt, cinnamon, and cloves. Alternately mix the egg white mixture and the buttermilk into the flour mixture until smooth. Fold in the cranberries. Transfer the mixture to the prepared Bundt pan. Bake 1 hour in the preheated oven, until a knife inserted in the cake comes out clean. Cool for 30 minutes and invert on to cake plate. Serve with whipped cream or ice cream,
